Dish pistons with that much stroke are a good thing if you want to run that stroker on the street with pump gas. Otherwise, you'd have to pick heads with pretty open chambers. -19 cc pistons should be about right for a 408 with most aftermarket heads. AFR's are an excellent choice. 195 to 225 cc depending on where you want to develop the torque. For a truck, I'd lean toward the smaller runners. Ford Racing only uses a 195 runner on their 427w crate motor. I selected Dart Pro-1's with 195 intake runners and 62 cc chambers for my 420w build. Roller cams are a good thing too, but as far as suggesting a profile; I'm still contemplating that myself! Get suggestions based on you application from the various cam grinders and pick one, that's what I'm doing.
