331 stroker afr question?

Im planning to freshen the engine in my 90 stang gt its a 331 with aluminum svo heads victor 302 intake 750 race demon carb I'm not sure on the cam as I bought the car but the engine does need a refresh. My plans are to rebuild the bottom end and buy afr 205 heads with the victor 302 and 750 carb Im planning to run a solid roller something in the 600 range the car is a tremec equipped 410 geared lightened street strip car any advice would be great I would love to run in the high 10's does this sound doable without spray?
