it is worth it if you think it is. I just dropped a 95 5.o in my '66. I went back to carb. Find out what the hp is on the motor. If it runs good and it has what you are looking for go for it. I can help with the walk through if you do it. You will need some elbow grease for it. Assuming you go with a carb set up you will need the following:

Timing cover to allow mech fuel pump. Can stay with electric but you will need a pump and to route the lines etc.
water pump
dist gear
flex plate 50oz 157 tooth for the c4 auto trans
intake
carb
fan

If I can do it you can. Let me know if you have any questions.

I am new to this website and I am doing a similar swap. I'm putting an '88 5.0 HO motor and T-5 transmission in a '66 fastback. I plan to use a carburetor for right now, maybe fuel injection later. I was wondering, can I use my existing EFI distributor or do I need to replace it?

Thanks
Ken
