If you change pistons on a balanced combo....how close in weight do they have to be to the weight of the piston your swapping out so you dont have to rebalance?

My shop suggested that 2 grams was okay for my street/strip combo. You might try to make up for it with different weight pins or rods. Rods can be ground on the end too. Got a paint scale with grams?

Mostly this will depend on more than just weight. If you replace 1 piston with the same archetecture 10-12 grams is acceptable in lower performance engines (my 429 SCJ is 10g)
The harder you twist it & the more longevity you want the closer you want it.
