I am building up a 351w for my 66 stang, and need some advice as to what size of carb to get. I either want to get a 650, 700 or 750 holley double pumper. Here is what I am getting/got already:

351w .030 over
Edelbrock rpm air-gap
Crane Cams 226 @ .050, .502 lift
AFR 185/58cc heads (2.02/1.60 valves)
Of course headers, nice flowing exhaust
probably around 9.5 to 10 compression

This car is going to be driven about 3 or 4 times a week...

Unless you've got a converter that stalls at less than about 2400 RPM, I would choose a 750 for your engine.
