After sitting for a few days I'll start the Gal, let it idle, creep into the street and I still have to go slow and feather the gas to keep it from stalling. After maybe 4-5 minutes and a few test accelerations I can finally drive normally. Is this the way it's supposed to be?

Whew, I was afraid the answer was "Needs new oil pump."
Car is in Houston, choke is electric, may be too rich?

Agreed. Even in warm weather, you need some amount of choke to account for fuel condensing out of the mixture onto the sides of the intake manifold until the engine itself is up to operating temperature. Might need to increase the fast idle speed a bit too.

I guess I'm old fashioned. I always like to give my car a minute before I take off, especially with the Galaxie. Longer in winter.
