I've run my engine on a test stand and had a couple oil leaks. One out of the from seal behind the damper and the other out of the rear oil pan.

I took my timing cover off and watched a whole bunch of coolant empty into my oil pan...

I want to put my engine back on the engine stand..take the oil pan off and clean it up and turn the engine over when I put my oil pan back on.

I know this may sound like a dumb question, but is there anything I need to worry about when turning the engine upside down after I've already run it? like fluids pouring into areas they shouldn't

It shouldn't be a problem.Crank it over with the spark plugs out to be safe..I'd recheck your oil after you've ran it just to be sure you got all the anti freeze flushed out.
