I think we figured out why my motor is running so hot. We kept the water pump pulley/fan driver from the 302, and just saw in the ford manual that the 302 and 351 are different. Here is my question:
The ford manual lists different water pump ratios for different engines/cars, like 1.13:1 and .96:1. Does it mean engine:fan or fan:engine?

I believe the ratios are fan:engine, so 1.13(fan):1(engine). The trick to the higher ratio water pump is to use a smaller diameter pulley on the pump, a larger crank pulley, or both. Usually A/C cars had the smaller water pump pulleys for better cooling. I used the two-groove pulley from an A/C car and it helped out cooling a lot. The difference in diameter is really visible. Hope this helps.

How do aftermarket pulleys effect cooling. Example: 351W, high flow edelbrock water pump, power steering, and alternator with large stereo. Would I suffer from putting the pulley system on? Because it reduces the alternator size, and water pump.

Any theories...
