I picked up a new SPAL electric fan with the 185F thermostatic switch. The question I have is, does this switch just replace my temperature sender? Will it still work to actually send the temp to my gauges? If not, where the hell should I mount the thing? anyone have any ideas?

It won't work to replace you temp sender, you will loose temperature signal to your gauge. Looking at a picture of a 351W RPM air gap intake, it looks like there are two holes in the front coolant crossover... one on the passenger side and one on the driver's side. You should be able to run the temp sender in one and the thermostatic switch in the other.
