NEWBE Needing Advice

Hey Everyone, I'm brand new to the site, and fairly new to Ford/Mustangs. I'm building a 1970 Coupe with my grandson, and none of the car is original, so not concerned about trying to keep it that way.

I have a 5.0 out of a 1991 Thunderbird, which I understand is a HO unit. The engine has a 4 barrel carb set up on it so any EFI is gone. Is this a good builder/keeper motor? I'd like to get a modest 300 to 350 hp out of it. Are there any simple/low budget tips to get it into that range? I also, do have a set of 1970 351 heads I could put on it, but what do you all think? Thanks in advance!
